BLACK PEPPER

Our Black Pepper from DGFresh Spices is a product of tradition, care, and Kerala’s rich soils, making it further than just a food medication necessity. Our pepper, which is naturally grown on our own colonies in the Western Ghats, is important and sweet. The high mound of Kerala give the ideal conditions for growing Malabar black pepper, which is prized across the world for its intensity and complexity of flavor. Without the use of dangerous chemicals, our vines are grown beneath shade trees using only organic styles and natural compost.

Each pepper berry is hand- picked at full maturity. Timing is critical, the berries are picked as they begin their color metamorphosis to red, icing they’ve the most essential canvases and the strongest flavor. After crop, the berries are spread out and sun- dried over a number of days. This slow- drying process allows the peppercorns to turn darker in color and develop its bite, without the loss of aroma of artificial drying. After drying, we clean the peppercorns and grade them. We use a combination of air- boasters and homemade selection to remove dust, stems and immature berries. The pepper is also graded for size and viscosity.
